Homemade Pop-Tarts, Blackberry-Basil.



Well bless all of your hearts! I got heaps and barrels of comments and emails asking about the venerable homemade pop-tarts. I am happy to share instructions for making these... they are very, very easy. 

Basically, you take your favorite pastry dough (or better yet, MY favorite pastry dough. MuahahahaHA.) Like I mentioned before, you can just keep it in your freezer, all the time. Roll it out and cut a few rectangles, about 4" x 6". 

Spread a thin layer of jam on half of the rectangle. I used blackberry jam picked up from the farmer's market this weekend, and I crumbled some fresh basil into it. You know, to be fancy. 

Fold the dough over and seal the edges with some milk or beaten egg. Cut vents in the top with a sharp knife, brush with more milk, and sprinkle sanding sugar over it. At this point, you can freeze the little pies, or you can bake them straight away. Just bake them in a 350-degree oven on a cookie sheet for 15 minutes or so, until they are golden brown. 

Or if they are in your freezer, eat them for supper. I am really into eating things you aren't supposed to for supper lately...croissants, chocolate squares, glasses of champagne. Two strawberries and a spoonful of Saint Andre. Whatever. I have eaten, and I have eaten well.

these are unbelievable. ah-mazing. i've been eating whatever i want lately too...exact to my cravings....and i've been SO satisfied. I think Luke will need a housewarming pie from you on Aug 1st=)....

I just made a similar thing - they were turnovers, filled with peaches and blueberries-yum! My pastry was more like a short crust but it worked so well for these... haven't looked at your recipe but I will! And thanks for the basil -blackberry idea! I have been using a lot of basil and mint these days and need to incorporate more in my desserts.

I have also been trying to figure out how to make those really good fig whole wheat bars they sell in corner stores or the bulk food isle. you know, the ones with lots of whole wheat/bran crust?

Anyways, this reminded me of them. Sounds delish.
